This coffee is a selection of four types of Arabica roasted separately and blended with a manual process in the original percentage.
The recipe is that of the first blend that Giovanni Erbisti prepared sixty-four years ago with the systems and precautions that have always been in use in the roasting laboratory, which has now reached the fourth generation of roasters.

The roasting is done by hand with direct flame, the machinery are dating back to the 1950s, a very different process from most roasters that use indirect flame. In this process, the margin of error is minimal, from one to three seconds.
The beans are mainly Arabica d'Altura, they are all selected in the producing countries (Ethiopia, Indonesia, Guatemala), in some cases whole (not washed before roasting to preserve all the qualities), sometimes blended together.
